A cylindrical, elongated courgette with dark green skin and always white flesh on the inside. Belongs to the same family as pumpkin, with distinct nutritional properties.
Very rich in vitamins, antioxidant compounds and fibre. Contains lutein and zeaxanthin, two compounds that help fight against macular degeneration.
Rich in B vitamins including B2 (riboflavin) for tissue repair and red blood cell formation, and B6 for protein metabolism and neurotransmitter synthesis. Also a source of vitamins C and A. Minerals include phosphorus, potassium and magnesium, best absorbed when cooked.
